  • 1 packet taco seasoning
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup salsa
  • 1 cup black beans, drained and rinsed
  • 4 cups tortilla chips, crushed
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 2 green onions, chopped (optional)
  • Optional toppings: diced tomatoes, sliced jalapeños, chopped cilantro, avocado slices

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.
  3. Stir in the diced onions and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute.
  4. Sprinkle taco seasoning over the meat mixture and stir well. Add salsa and black beans, mixing until everything is combined. Let it simmer for 3-5 minutes.
  5. In a 9×13-inch baking dish, spread half the crushed tortilla chips as the base layer. Spoon the beef mixture evenly over the chips. Spread sour cream on top, followed by a generous layer of shredded cheese. Add the remaining crushed tortilla chips on top for extra crunch.
  6. Place the casserole in the preheated oven and bake for 20 minutes, or until the cheese is bubbly and golden.
  7. Remove the casserole from the oven and let it cool for 5 minutes. Sprinkle green onions, diced tomatoes, and other toppings as desired. Serve warm.
