Instructions

  1. Peel the turnips using a vegetable peeler, then cut them into 1-inch cubes.
  2. Place the cubed turnips in a large pot and cover with water. Add a pinch of salt and bring to a boil over high heat. Reduce the heat to medium and simmer for 20-25 minutes, or until the turnips are fork-tender.
  3. Drain the turnips in a colander and let them sit for a few minutes to release excess moisture.
  4. In a large skillet, melt the unsalted butter over medium heat. Stir frequently until the butter turns a golden brown color and releases a nutty aroma, about 5 minutes.
  5. Transfer the drained turnips to a large bowl. Add the brown butter, heavy cream, salt, and black pepper. Use a potato masher to mash the turnips until smooth and creamy. For extra smoothness, blend the mixture in a food processor.
  6. Stir in the grated Parmesan cheese until fully incorporated. Taste and adjust seasoning as needed.
  7. Sprinkle chopped fresh parsley over the mashed turnips for a pop of color and extra flavor. Serve warm alongside your favorite main course.
