Cozy Cowboy Casserole with Tater Tots

  • 1 yellow onion, finely diced
  • 2 cloves minced garlic
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 package (32 ounces) frozen tater tots
  • Salt and pepper to taste
  • Optional spices: paprika or chili powder

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. Heat a large skillet over medium heat. Add the ground beef and cook until fully browned, breaking it up as you go (about 6-8 minutes). Drain excess fat if needed.
  3. Add the diced onion and minced garlic to the skillet with the beef. Cook for another 3-4 minutes until softened and fragrant.
  4. In a mixing bowl, combine the cream of mushroom soup and sour cream. Stir until smooth and creamy.
  5. Spread the beef mixture evenly in a 9×13 inch casserole dish. Pour the creamy soup mixture over the beef and spread it out with a spatula.
  6. Sprinkle shredded cheddar cheese over the creamy mixture, spreading it evenly.
  7. Arrange the frozen tater tots in a single layer across the top of the casserole.
  8. Bake uncovered for 35-40 minutes, or until the tater tots are golden brown and crispy.
  9. Let the casserole rest for 5 minutes before serving. Serve warm and enjoy!
