  • 2 pounds beef tips (chuck or sirloin), cut into bite-sized pieces
  • 2 tablespoons unsalted butter
  • 1/4 cup all-purpose flour (30g)
  • 1 tablespoon olive oil
  • 2 cups beef broth (480ml)
  • 2 tablespoons Worcestershire sauce
  • 3 garlic cloves, minced
  • 1 medium onion, finely chopped
  • 8 oz fresh mushrooms, sliced (optional)
  • 1/2 cup sour cream (120ml)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, a handful chopped (optional)

Instructions

  1. Pat the beef tips dry with paper towels and season with salt and pepper.
  2. Place the flour in a shallow bowl and toss the beef tips in the flour until lightly coated. Shake off excess flour.
  3. Heat olive oil and butter in a large skillet over medium-high heat. Brown the beef tips in batches for 2-3 minutes per side until golden crust forms. Remove and set aside.
  4. In the same skillet, sauté chopped onion for about 3 minutes until translucent. Add minced garlic and cook for another minute, stirring constantly.
  5. Add sliced mushrooms to the skillet and sauté for 4-5 minutes until softened and browned (optional).
  6. Transfer browned beef, onions, garlic, and mushrooms into the crockpot. Pour in beef broth and Worcestershire sauce. Stir gently to combine.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is fork-tender and gravy thickened.
  8. About 15 minutes before serving, stir in sour cream off heat to add creaminess. Avoid boiling after adding sour cream.
  9. Taste and adjust seasoning with salt and pepper if needed. Garnish with chopped parsley before serving.

Notes

For gluten-free, substitute flour with cornstarch. For dairy-free, replace sour cream with coconut yogurt or omit. If gravy is too thin, whisk 1 tbsp flour or cornstarch with cold water and stir in, then cook on high for 15 more minutes. Do not skip browning the beef for best flavor. Stir in sour cream off heat to avoid curdling.
