A comforting slow cooker chicken and dumplings recipe that is simple, hearty, and perfect for cozy nights. This recipe uses tender chicken, fluffy dumplings, and rich broth for a soul-soothing meal with minimal prep.

  • 3 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams)
  • 4 cups (960 ml) chicken broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley flakes
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil or unsalted butter
  • 1 1/2 cups (190 g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (120 ml) whole milk or dairy-free alternative
  • 1/2 cup (120 g) small-curd cottage cheese, blended smooth
  • 2 tablespoons unsalted butter, melted
  • 1 large egg

Instructions

  1. Heat olive oil or butter in a skillet over medium heat. Add chopped onion, carrots, and celery. Sauté for about 5 minutes until softened and fragrant. Transfer the veggies into the crockpot.
  2. Place chicken breasts on top of the vegetables in the crockpot. Pour in chicken broth, sprinkle thyme, parsley, salt, and pepper. Stir gently to combine.
  3. Cover and cook on low for 3 to 4 hours, until chicken is tender and easily shredded. Avoid lifting the lid too often.
  4. Remove chicken breasts and shred with two forks. Return shredded chicken to crockpot and stir in heavy cream. Taste and adjust seasoning if needed.
  5. In a mixing bowl, combine flour, baking powder, and salt. In another bowl, whisk milk, egg, melted butter, and blended cottage cheese until smooth. Pour wet ingredients into dry and stir gently until just combined.
  6. Using a spoon, drop generous spoonfuls of dumpling batter onto the surface of the simmering stew. Do not stir after adding dumplings.
  7. Cover and cook on low for another 30 to 40 minutes until dumplings puff up and become tender. Avoid lifting the lid during this time.
  8. Check dumplings by inserting a toothpick; it should come out clean. Give stew a gentle stir and serve hot.

Notes

Do not overmix dumpling batter to keep dumplings tender. Add dumplings only after chicken is fully cooked to avoid soggy or dense dumplings. Keep the lid on during cooking to maintain heat and timing. If broth is too thin after cooking, thicken with cornstarch slurry and cook on high for 10 minutes. For gluten-free, substitute flour with gluten-free baking mix and ensure broth is gluten-free.
