A simple, flavorful slow-cooked pot roast with ranch seasoning, pepperoncini peppers, and buttery sauce, perfect for cozy dinners and easy meals.

Ingredients

Scale
  • 34 pounds chuck roast
  • 1 packet (about 1 ounce) ranch seasoning mix
  • 1 packet (about 1 ounce) au jus gravy mix
  • 1/2 cup (113 grams) unsalted butter
  • 68 whole pepperoncini peppers
  • 1/4 cup (60 ml) pepperoncini brine
  • Optional: 2-3 minced garlic cloves
  • Optional: fresh parsley for garnish

Instructions

  1. Trim any excess fat from the chuck roast.
  2. Sprinkle ranch seasoning mix and au jus gravy mix evenly over all sides of the roast and rub gently.
  3. Place the seasoned roast into the crockpot. If using, scatter minced garlic over the top.
  4. Slice the butter into pats and place on top of the roast.
  5. Nestle 6-8 whole pepperoncini peppers around and on top of the roast, then pour 1/4 cup of pepperoncini brine over everything.
  6. Cover and cook on LOW for 8 hours or HIGH for 4-5 hours until the meat is fork-tender and reaches an internal temperature of 190°F (88°C).
  7. If not done, cook an additional 30-60 minutes on low.
  8. Shred the meat in the crockpot using two forks, mixing it with the sauce and peppers.
  9. Garnish with fresh parsley if desired.
  10. Optional: To thicken sauce, stir in a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water, then cook on HIGH for 15 minutes.

Notes

Use a well-marbled chuck roast for best tenderness and flavor. Do not lift the lid frequently to maintain cooking temperature. Butter should be sliced into pats for even melting. Let roast rest 10 minutes before shredding. Sauce can be thickened with cornstarch slurry if needed. Frozen pepperoncini can be used after thawing. For dairy-free, substitute butter and ranch seasoning accordingly.
