  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, finely chopped
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar cheese, chopped green onions, crumbled bacon

Instructions

  1. Peel and dice the potatoes, chop the onion, carrots, celery, and garlic, and cube the ham.
  2. Heat the butter in a large pot over medium heat. Add the onion, carrots, celery, and garlic, and sauté for 5 minutes until softened.
  3. Sprinkle the flour over the sautéed veggies and stir well to combine. Cook for 1-2 minutes to remove the raw flour taste.
  4. Gradually add the chicken broth, stirring constantly to avoid lumps. Bring to a gentle simmer.
  5. Add the diced potatoes and ham to the pot. Season lightly with salt and pepper. Cover and simmer for 20-25 minutes, or until the potatoes are tender.
  6. Reduce the heat to low and stir in the heavy cream. Let the soup warm through for 5 minutes without boiling.
  7. Taste and adjust the seasoning as needed. If the soup is too thick, add a splash of broth to thin it out.
  8. Serve hot with your favorite toppings.
