Ingredients

  • Russet potatoes, peeled and cut into thick chunks (about 2-inch pieces)
  • Unsalted butter
  • Chicken broth (or vegetable broth for vegetarian option)
  • Onion, diced finely
  • Garlic, minced or grated
  • Salt and pepper, to taste
  • Parsley, chopped fresh

Instructions

  1. Peel and chop the potatoes into thick chunks, about 2-inch pieces.
  2. In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion and minced garlic, stirring occasionally, until soft and fragrant, about 3-4 minutes.
  3. Add the potatoes to the pot and stir gently to coat them in the butter mixture, being careful not to mash them.
  4. Pour in the chicken broth just until the potatoes are barely covered. Bring to a gentle boil, then reduce the heat to medium-low.
  5. Cover the pot with a lid and let the potatoes simmer for 20 minutes, stirring occasionally, until tender but still holding their shape.
  6. Season generously with salt and pepper, tasting as you go to achieve the perfect balance of flavor.

Notes

For a thicker broth, mash a few potato chunks against the side of the pot. Customize the recipe with smoked paprika, cayenne, or fresh herbs like rosemary or thyme.
