  • 2 cups cooked turkey, shredded or diced
  • 8 ounces egg noodles
  • 2 carrots, sliced into thin rounds
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 8 cups turkey or chicken broth
  • 1 bay leaf
  • 2 sprigs fresh thyme (optional)
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large stockpot over medium heat.
  2. Add diced onion, sliced carrots, and chopped celery. SautΓ© for about 5 minutes, stirring occasionally, until the vegetables start to soften.
  3. Stir in the minced garlic and cook for another 30 seconds, just until fragrant.
  4. Pour in the turkey or chicken broth, and add the bay leaf and thyme. Bring the mixture to a gentle boil.
  5. Lower the heat to a simmer and cook for 15 minutes, allowing the flavors to meld and the vegetables to become tender.
  6. Add the shredded turkey and cook for another 5 minutes, just until heated through.
  7. Meanwhile, cook the egg noodles according to the package instructions. Drain and set aside.
  8. Remove the bay leaf and thyme sprigs from the soup. Taste and adjust seasoning with salt and black pepper.
  9. Stir in the cooked egg noodles and let the soup simmer for 2-3 minutes to combine flavors.
  10. Serve hot, garnished with fresh parsley for a pop of color.

Notes

Cook noodles separately to prevent them from getting mushy. Add parsley or fresh herbs just before serving for a bright finish.
