A creamy, spicy buffalo chicken dip perfect for parties and game nights, combining cream cheese, shredded chicken, and buffalo sauce for a rich and flavorful snack.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 280g), rotisserie chicken preferred
  • 8 ounces cream cheese (225g), softened to room temperature
  • ½ cup buffalo wing sauce (120ml), Frank’s RedHot recommended
  • ½ cup sour cream (120g)
  • 1 cup shredded cheddar cheese (115g)
  • ½ cup shredded mozzarella cheese (55g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons chopped green onions or chives (optional)
  • Celery sticks or tortilla chips for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Shred about 2 cups (280g) of cooked chicken, removing skin if using rotisserie chicken.
  3. Soften 8 ounces (225g) of cream cheese in a mixing bowl and beat with a hand or stand mixer until smooth and creamy (2-3 minutes).
  4. Add ½ cup (120ml) buffalo wing sauce and ½ cup (120g) sour cream to the cream cheese and beat until fully combined.
  5. Sprinkle in 1 teaspoon garlic powder, 1 teaspoon onion powder, and ½ teaspoon freshly ground black pepper; mix evenly.
  6. Fold in the shredded chicken, 1 cup (115g) cheddar cheese, and ½ cup (55g) mozzarella cheese gently to coat the chicken without overmixing.
  7. Transfer the mixture to an 8×8-inch (20×20 cm) baking dish and smooth the top with a spatula.
  8. Bake for 20-25 minutes until hot, bubbly, and lightly golden on top.
  9. Remove from oven, garnish with chopped green onions or chives, and serve warm with celery sticks, tortilla chips, or toasted baguette slices.

Notes

Soften cream cheese fully before mixing to avoid lumps. Adjust buffalo sauce quantity to control heat level. For quicker prep, microwave dip for 4-5 minutes, stirring halfway, but baking gives a better crust. Use fresh shredded chicken for best flavor. Leftovers keep up to 3 days refrigerated; reheat gently adding milk or cheese to restore creaminess.
