  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces rotini pasta
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons Cajun seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook rotini pasta according to package instructions until al dente. Drain and set aside.
  2. Toss chicken pieces with Cajun seasoning, salt, and pepper until evenly coated.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes, stirring occasionally, until browned and cooked through. Remove chicken from skillet and set aside.
  4. Reduce heat to medium and add butter to the skillet. Once melted, add minced garlic and cook for 1-2 minutes until fragrant.
  5. Pour in chicken broth and heavy cream, stirring to combine. Let the mixture simmer for 3-4 minutes until slightly thickened.
  6. Add grated Parmesan cheese and stir until melted and the sauce is smooth.
  7. Return cooked chicken to the skillet along with the drained rotini. Toss everything together until the pasta and chicken are coated in the creamy sauce.
  8. Taste and adjust seasoning with more Cajun seasoning, salt, or pepper if needed.
  9. Garnish with fresh parsley before serving warm.

Notes

Adjust the spice level by adding more or less Cajun seasoning. Use freshly grated Parmesan for a smoother sauce. For a gluten-free option, substitute rotini with gluten-free pasta.
