  • 3/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 stalks celery, finely chopped
  • 1 small red onion, minced (optional)
  • 1/4 cup fresh dill, chopped
  • 2 hard-boiled eggs, chopped
  • Salt and black pepper to taste
  • 1 teaspoon granulated sugar
  • 1 tablespoon olive oil

Instructions

  1. Place peeled and cut potatoes in a large pot and cover with cold, salted water. Bring to a boil over medium-high heat. Reduce to a gentle simmer and cook for 10-12 minutes or until potatoes are fork-tender but still hold their shape. Drain and let cool slightly.
  2. While potatoes cook, place eggs in a small pot, cover with water, and bring to a boil. Turn off heat, cover, and let sit for 10 minutes. Transfer eggs to cold water, peel, and chop.
  3. In a medium bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, olive oil, sugar, salt, and pepper until smooth. Taste and adjust seasoning as needed.
  4. Gently fold the warm potatoes into the dressing, being careful not to break them up. Add celery, red onion, chopped eggs, and fresh dill. Toss gently until evenly coated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably 2-3 hours, to let flavors meld.
  6. Before serving, gently stir the salad, taste for seasoning, and add extra fresh dill or black pepper if desired.

Notes

Use fresh dill for best flavor; dried dill can be used but in smaller amounts. Do not overcook potatoes to avoid mushy texture. Mixing dressing into warm potatoes helps absorb flavors. Chill salad for at least 1 hour for best taste. For a lighter version, substitute half the mayo with Greek yogurt or use avocado mayo for dairy-free. Add smoked paprika or hot sauce for extra flavor.
