  • 2 cups desiccated coconut (unsweetened)
  • 1 teaspoon vanilla extract
  • 1 tablespoon powdered sugar (optional)
  • Pinch of salt

Instructions

  1. In a medium-sized mixing bowl, combine the sweetened condensed milk, vanilla extract, and a pinch of salt.
  2. Slowly stir in the desiccated coconut, mixing until fully combined. If the mixture is too sticky, add a tablespoon of powdered sugar and mix again.
  3. Using a small cookie scoop or your hands, roll the mixture into bite-sized balls, about 1-inch in diameter.
  4. Place the rolled balls on a tray lined with parchment paper. Sprinkle additional coconut over the top for a snowy effect.
  5. Refrigerate the truffles for at least 1 hour to firm up.
  6. Once chilled, transfer the truffles to an airtight container for storage or serve immediately.

Notes

Chill the mixture before rolling if it feels too sticky. Don’t skip the pinch of salt as it enhances the flavors.
