  • 8 ounces cream cheese (full-fat preferred)
  • 2 cups chicken broth
  • 1 can Rotel tomatoes (diced tomatoes with green chilies)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 can black beans (rinsed and drained)
  • 1 packet ranch seasoning mix
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, green onions, sour cream, tortilla chips, jalapeños

Instructions

  1. Place the chicken breasts at the bottom of your crockpot.
  2. Add the Rotel tomatoes, corn kernels, black beans, ranch seasoning mix, chili powder, garlic powder, and chicken broth over the chicken.
  3. Stir gently to combine the ingredients, ensuring the chicken is fully covered.
  4. Cover the crockpot with its lid and set it to cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before the cooking time is up, add the cream cheese. Let it sit on top to soften.
  6. Once the cooking time is complete, use two forks to shred the chicken right in the crockpot. Stir everything thoroughly to mix in the cream cheese.
  7. Serve hot, and top with your favorite toppings like shredded cheese, green onions, or sour cream.
