  • 1 cup chopped sun-dried tomatoes (preferably oil-packed)
  • 3 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups fresh spinach (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt, pepper, and Italian seasoning.
  2. Place the seasoned chicken directly into the crockpot base. Sprinkle the minced garlic and chopped sun-dried tomatoes evenly over the top.
  3. Pour the heavy cream over the chicken and tomatoes. Sprinkle the grated Parmesan cheese on top. Do not stir; let the cream settle around the chicken.
  4. Cover and cook on low heat for 4-5 hours until the chicken is tender and reaches an internal temperature of 165°F (74°C).
  5. About 15 minutes before the end of cooking, stir in the fresh spinach leaves to wilt.
  6. Give everything a gentle stir to combine the spinach and creamy sauce. Taste and adjust seasoning if needed. Serve warm.

Notes

If the sauce is too thick, add a splash of chicken broth or water to loosen it. Avoid overcooking chicken to prevent dryness; check doneness at 4 hours. Use thick chicken breasts for best results. Stir in spinach near the end to keep it vibrant. For dairy-free, substitute heavy cream with coconut milk and Parmesan with nutritional yeast. Frozen chicken breasts can be used but increase cooking time by 1-2 hours.
