A tangy, creamy chicken salad sandwich featuring dill pickles, shredded chicken, and a flavorful dressing, perfect for lunch or picnics.

Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup dill pickles, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, diced (optional)
  • Salt and pepper to taste
  • 4 sandwich rolls or bread

Instructions

  1. Shred or dice the cooked chicken into bite-sized pieces. Dice the dill pickles, celery, and red onion, and chop the fresh dill.
  2. In a mixing bowl, combine 1/2 cup mayonnaise, 1 tablespoon Dijon mustard, and a pinch of salt and pepper. Stir until smooth and creamy.
  3. Add the chicken, pickles, celery, onion, and dill to the bowl with the dressing. Mix well until everything is evenly coated.
  4. Taste the chicken salad and adjust the seasoning if needed. Add more salt, pepper, or dill to suit your palate.
  5. Toast your sandwich rolls or bread for a golden, crispy edge, if desired.
  6. Spoon the chicken salad generously onto your bread or rolls. Serve immediately or refrigerate for later.

Notes

For extra crunch, sprinkle crushed potato chips on top before serving. Refrigerate the chicken salad for 30 minutes before serving to allow flavors to meld.
