  • 2 medium boneless, skinless chicken breasts
  • 4 tablespoons (56 grams) unsalted butter, softened
  • 1 ½ cups (360 ml) heavy cream (or half-and-half for lighter option)
  • 3 cloves garlic, minced
  • 1 ½ cups (150 grams) freshly grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish
  • 1 tablespoon olive oil

Instructions

  1. Preheat grill or grill pan over medium-high heat. Pat chicken breasts dry, brush with olive oil, season with salt and pepper. Grill chicken 6-7 minutes per side until internal temperature reaches 165°F (74°C). Remove and rest 5 minutes, then slice thinly against the grain.
  2. Bring a large pot of salted water to a boil. Cook fettuccine according to package instructions (10-12 minutes) until al dente. Drain, reserving ½ cup (120 ml) pasta water. Toss pasta with a bit of olive oil to prevent sticking.
  3. In a large skillet over medium heat, melt butter. Add minced garlic and sauté for 1 minute until fragrant, avoiding browning.
  4. Pour in heavy cream and simmer gently for 3-4 minutes, stirring occasionally until slightly thickened.
  5. Lower heat to medium-low and gradually whisk in Parmesan cheese until melted and sauce is smooth. Add reserved pasta water as needed to loosen sauce. Season with salt and pepper to taste.
  6. Add cooked fettuccine to skillet and toss gently to coat noodles evenly with sauce. Add more pasta water if needed for creamy consistency.
  7. Arrange sliced grilled chicken over pasta and garnish with chopped fresh parsley. Serve immediately.

Notes

Use fresh Parmesan cheese for best melting and flavor. Keep heat low when adding cheese to avoid curdling. Reserve pasta water to adjust sauce consistency. Let grilled chicken rest before slicing to keep it juicy. For gluten-free, use gluten-free pasta; for dairy-free, substitute coconut cream and vegan Parmesan.
