  • Freshly ground black pepper, a pinch
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat your oven and prepare the stone: Place your pizza stone or baking steel in the oven and preheat to 475°F (245°C). Give it at least 30 minutes to get really hot.
  2. Prepare the dough: Lightly flour your work surface. Stretch or roll out 1 pound (450 g) of pizza dough into a roughly 12-inch (30 cm) circle. Let rest 5 minutes if dough resists or shrinks.
  3. Mix the cheese blend: In a bowl, combine ricotta, mozzarella, parmesan, and asiago cheeses. Stir in minced garlic, chopped rosemary, salt, and pepper until well blended and spreadable.
  4. Assemble the pizza: Transfer dough to a pizza peel dusted with flour or cornmeal. Brush dough edges with olive oil. Spread cheese mixture evenly over dough, leaving about 1 inch (2.5 cm) border.
  5. Bake the pizza: Slide pizza onto the preheated stone. Bake for 10-12 minutes, rotating halfway through, until cheese is bubbly and crust is golden and crisp.
  6. Finish and serve: Remove pizza carefully and let rest a couple of minutes. Optionally sprinkle crushed red pepper flakes or fresh herbs before slicing.
