A quick and easy Mediterranean-inspired pasta dish featuring creamy Greek yogurt, tangy feta cheese, and briny olives. Perfect for a cozy dinner or summer potluck.

  • 12 oz (340 g) pasta (penne or rotini)
  • 1 cup (240 ml) plain full-fat Greek yogurt
  • 1/2 cup (75 g) crumbled feta cheese
  • 1/3 cup (50 g) sliced Kalamata olives
  • 2 cloves garlic, minced
  • 2 tbsp (30 ml) olive oil
  • 1 tbsp (15 ml) lemon juice
  • 1 tsp dried oregano or 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • Optional: Sun-dried tomatoes, chopped
  • Optional: Baby spinach
  • Optional: Shredded chicken or shrimp

Instructions

  1. Bring a large pot of salted water to a boil. Cook 12 oz (340 g) of pasta according to the package instructions until al dente. Reserve 1/4 cup (60 ml) of pasta water before draining.
  2. Heat 2 tbsp (30 ml) of olive oil in a skillet over medium heat. Add 2 minced garlic cloves and sauté until fragrant, about 1 minute.
  3. In a mixing bowl, whisk together 1 cup (240 ml) of Greek yogurt, 1 tbsp (15 ml) of lemon juice, and the reserved pasta water. Stir in 1 tsp dried oregano or 1 tbsp fresh parsley. Season with salt and pepper to taste.
  4. Add the drained pasta to the skillet with the sautéed garlic. Pour the yogurt sauce over the pasta and toss until evenly coated.
  5. Stir in 1/2 cup (75 g) of crumbled feta cheese and 1/3 cup (50 g) of sliced olives. If desired, add sun-dried tomatoes or baby spinach at this stage.
  6. Transfer the pasta to a serving dish and garnish with additional feta crumbles, fresh parsley, and a drizzle of olive oil. Serve warm.
