A luscious and easy-to-make pie featuring a creamy Irish cream filling with rich chocolate swirls, perfect for celebrations and cozy gatherings.

Ingredients

Scale
  • 1 Β½ cups (150g) chocolate cookie crumbs (Oreos or chocolate graham crackers, finely crushed)
  • 5 tablespoons (70g) unsalted butter, melted
  • 2 tablespoons granulated sugar (optional)
  • 1 cup (240ml) heavy cream, cold
  • 8 oz (225g) cream cheese, softened
  • ΒΎ cup (150g) granulated sugar
  • β…” cup (160ml) Irish cream liqueur (Baileys or preferred brand)
  • 1 teaspoon pure vanilla extract
  • Β½ cup (90g) semi-sweet chocolate chips, melted

Instructions

  1. Prepare the crust: In a medium bowl, combine chocolate cookie crumbs, melted butter, and sugar if using. Mix until crumbs are evenly coated. Press firmly into the bottom and up the sides of a 9-inch pie dish. Chill in the fridge for at least 15 minutes.
  2. Whip the cream: In a large mixing bowl, whip cold heavy cream with an electric mixer on medium-high speed until soft peaks form, about 3-5 minutes.
  3. Mix the filling: Beat softened cream cheese with granulated sugar until smooth. Add Irish cream liqueur and vanilla extract, mixing until fully combined.
  4. Combine whipped cream and cream cheese mixture: Gently fold whipped cream into the cream cheese mixture using a rubber spatula to maintain airy texture.
  5. Prepare the chocolate swirls: Melt semi-sweet chocolate chips in a microwave-safe bowl in 15-second bursts, stirring until smooth. Let cool slightly but keep pourable.
  6. Assemble the pie: Pour half the filling onto the chilled crust and smooth. Drizzle half the melted chocolate over the filling and swirl gently with a skewer or knife. Repeat with remaining filling and chocolate to create marbled swirls.
  7. Chill: Cover loosely with plastic wrap and refrigerate for at least 4 hours or overnight to set.
  8. Serve: Let pie sit at room temperature for 10 minutes before slicing with a warm, clean knife.

Notes

Chill bowls and beaters before whipping cream for best texture. Do not overmix when folding whipped cream into filling. Use gentle swirling motions for chocolate ribbons. Warm knife before slicing for clean cuts. Crust can be prepared up to 2 days ahead. For non-alcoholic version, substitute Irish cream with extra heavy cream and vanilla or coffee. For dairy-free, use coconut cream and vegan cream cheese.
