  • 1 teaspoon kosher salt (plus more to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)
  • 2 tablespoons all-purpose flour (or gluten-free flour)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and sliced
  • 3/4 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup fresh basil, chopped (or parsley)
  • Extra parmesan cheese, for serving

Instructions

  1. Pat chicken breasts dry and pound to even thickness (about 3/4 inch).
  2. Season both sides with salt, pepper, garlic powder, and smoked paprika.
  3. Dredge chicken lightly in flour, shaking off excess.
  4. Heat olive oil and butter in a large skillet over medium-high heat.
  5. Add chicken and cook 4-5 minutes per side until golden brown and cooked through (internal temp 165°F). Transfer chicken to a plate and cover loosely with foil.
  6. Lower heat to medium. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
  7. Stir in sun-dried tomatoes and cook for 1 minute.
  8. Pour in chicken broth, scraping up browned bits from the pan.
  9. Add heavy cream, parmesan, Italian seasoning, and red pepper flakes. Simmer gently for 3-5 minutes until sauce thickens slightly.
  10. Return chicken to skillet, nestling into the sauce. Spoon sauce over chicken and simmer for 3-4 minutes to meld flavors and reheat chicken.
  11. Taste and adjust salt and pepper as needed.
  12. Sprinkle with fresh basil and extra parmesan. Serve hot with crusty bread, pasta, or rice.

Notes

For gluten-free, use almond flour. For dairy-free, substitute coconut cream and vegan parmesan. Chicken thighs can be used instead of breasts. Sauce can be made ahead and improves overnight. If sauce splits, whisk in cold cream off heat. Serve with pasta, rice, or crusty bread. Leftovers keep well for 3 days refrigerated.
