Creamy Marry Me Chicken with Sun-Dried Tomatoes

A quick and easy creamy chicken dish featuring sun-dried tomatoes and a luscious Parmesan cream sauce, perfect for weeknight dinners or impressing guests.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 g)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained but keep a bit of oil)
  • 1 cup chicken broth (240 ml)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels; season both sides generously with salt, pepper, and half of the Italian seasoning. Set aside.
  2. Heat olive oil and butter in a large skillet over medium-high heat until shimmering. Add chicken breasts and cook about 5 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken to a plate and tent with foil to keep warm.
  3. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Stir constantly for about 2 minutes until garlic is fragrant and tomatoes soften.
  4. Pour in chicken broth, scraping the bottom of the pan to release browned bits. Simmer and reduce broth by about half, about 5 minutes.
  5. Stir in heavy cream and grated Parmesan cheese. Mix gently until cheese melts and sauce is smooth. Add remaining Italian seasoning and red pepper flakes. Adjust salt and pepper to taste.
  6. Return chicken breasts to the skillet, nestle into the sauce, and simmer together for 2 minutes to meld flavors and keep chicken juicy.
  7. Garnish with fresh basil or parsley before serving.

Notes

If sauce is too thick, add more broth or cream to adjust consistency. Pat chicken dry before searing for best browning. Use freshly grated Parmesan for smooth melting. Let chicken rest tented with foil to keep juices locked in. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
