  • 1 1/2 cups (150g) graham cracker crumbs
  • 1/4 cup (50g) granulated sugar
  • 6 tablespoons (85g) unsalted butter, melted
  • 4 (8-ounce) packages (900g total) cream cheese, softened
  • 1 1/4 cups (250g) granulated sugar
  • 1 cup (240ml) sour cream, room temperature
  • 4 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons all-purpose flour
  • 1 cup (150g) fresh strawberries, hulled and sliced
  • 1 cup (150g) fresh blueberries
  • 1 cup (150g) fresh raspberries
  • 2 tablespoons granulated sugar or honey (optional)
  • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until all crumbs are moistened.
  2. Press crumb mixture firmly into the bottom of a 9-inch springform pan, creating an even layer. Bake for 10 minutes. Remove and let cool.
  3. In a large bowl, beat softened cream cheese on medium speed until smooth and fluffy, about 3-4 minutes.
  4. Gradually add sugar and flour, mixing until incorporated.
  5. Add sour cream and vanilla extract, mixing gently to combine.
  6. Add eggs one at a time, mixing on low speed after each addition. Avoid overmixing.
  7. Pour filling over cooled crust and smooth the top with a spatula.
  8. Wrap the outside of the springform pan with aluminum foil to prevent leaks. Place pan inside a larger roasting pan.
  9. Pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan.
  10. Bake at 325°F (160°C) for 55-65 minutes until edges are set and center jiggles slightly.
  11. Turn off oven and crack door open. Let cheesecake cool in oven for 1 hour.
  12. Remove cheesecake from water bath and pan. Chill in refrigerator for at least 4 hours or overnight.
  13. Toss fresh berries with sugar (if using) and lemon juice. Let sit for 15 minutes to macerate.
  14. Spoon berry topping over chilled cheesecake just before serving.

Notes

Use room temperature ingredients for smooth blending. Avoid overmixing eggs to prevent cracks. Water bath is essential to keep cheesecake moist and crack-free. Gradual cooling in the oven prevents cracks. Wrap springform pan with foil to avoid leaks. If cracks appear, cover with berry topping or fruit sauce. Frozen berries can be used if thawed and drained well.
