Instructions

  1. Crack 4 large eggs into a mixing bowl. Lightly beat them with a whisk or fork just until combined—do not overbeat. This takes about 1 minute.
  2. Place a non-stick pan over medium-low heat and add half the butter (about 1/2 tablespoon). Once melted and foaming gently, pour in the eggs.
  3. Using a rubber spatula, stir the eggs continuously—do not leave them alone. Keep the eggs moving so they cook gently and form soft curds. This step takes approximately 3 to 4 minutes.
  4. After about 30 seconds of stirring, remove the pan from the heat but keep stirring. Alternate between on and off heat every 30 seconds or so while stirring to prevent overcooking.
  5. Gradually add the remaining butter in small pieces during the stirring process to add creaminess and richness.
  6. Just before the eggs are almost done but still slightly runny, add a pinch of sea salt and freshly ground black pepper. Keep stirring gently.
  7. Remove the pan from heat completely and stir in 1 tablespoon of crème fraîche or heavy cream to stop the cooking and make the eggs creamy.
  8. Spoon the scrambled eggs onto warm plates and garnish with chopped chives or fresh herbs if desired. Serve immediately.

Notes

Use free-range or organic eggs for richer flavor. For dairy-free, substitute butter with avocado or olive oil and crème fraîche with coconut cream. Stir constantly and use the on/off heat technique to avoid rubbery eggs. Serve immediately for best texture.
