Ingredients

Scale
  • 2 pounds (900 g) chicken wings, split into drumettes and flats, skin-on
  • 1 tablespoon (15 g) baking powder (not baking soda)
  • 1 teaspoon (5 g) salt
  • ½ teaspoon (2 g) freshly ground black pepper
  • For Buffalo flavor: ¼ cup (60 ml) hot sauce, 2 tablespoons (30 g) melted butter, 1 teaspoon (5 g) garlic powder
  • For Honey Garlic flavor: 3 tablespoons (45 ml) honey, 2 cloves garlic minced, 1 tablespoon (15 ml) soy sauce
  • For BBQ flavor: ½ cup (120 ml) BBQ sauce
  • For Lemon Pepper flavor: 1 teaspoon (5 g) lemon zest, 1 teaspoon (5 g) cracked black pepper, ½ teaspoon (2 g) salt
  • For Garlic Parmesan flavor: 3 tablespoons (30 g) grated Parmesan cheese, 2 cloves garlic minced, 1 tablespoon (15 g) melted butter, fresh parsley for garnish

Instructions

  1. Pat dry about 2 pounds (900 g) of chicken wings with paper towels and separate into drumettes and flats if needed.
  2. In a large mixing bowl, toss wings with 1 tablespoon (15 g) baking powder, 1 teaspoon (5 g) salt, and ½ teaspoon (2 g) black pepper until evenly coated.
  3. Preheat the air fryer to 400°F (200°C) for 5 minutes.
  4. Place wings in a single layer inside the air fryer basket without overcrowding. Cook in batches if necessary.
  5. Air fry wings at 400°F (200°C) for 20-25 minutes, flipping halfway through cooking with tongs for even browning.
  6. Prepare your chosen sauce or seasoning from the 5 flavor variations while wings cook.
  7. Once wings are done, toss them in the prepared sauce or seasoning until evenly coated.
  8. Garnish as desired (e.g., parsley for garlic parmesan, extra lemon zest for lemon pepper) and serve immediately.

Notes

Use baking powder (not baking soda) for crispiness. Do not overcrowd the air fryer basket to avoid soggy wings. Flip wings halfway through cooking for even crispiness. Let wings rest on a wire rack after cooking to keep skin crispy. Reheat in air fryer or oven to refresh crispiness. Substitute maple syrup for honey or coconut aminos for soy sauce for gluten-free options.
