  • 4 medium Russet potatoes
  • 12 sprigs fresh rosemary, finely chopped
  • Sea salt, to taste
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon garlic powder (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. Wash and peel the Russet potatoes. Cut them into evenly sized sticks about ¼ to ½ inch thick (around 1 cm).
  2. Place the cut potatoes into a large bowl of cold water and soak for at least 30 minutes (or up to an hour) to remove excess starch.
  3. Drain the potatoes and pat them dry thoroughly with a kitchen towel or paper towels.
  4. Transfer the dried potatoes to a mixing bowl. Add olive oil, finely chopped rosemary, sea salt, garlic powder (if using), and freshly ground black pepper. Toss until evenly coated.
  5. Preheat the air fryer to 380°F (190°C) for 3-5 minutes.
  6. Place the fries in the air fryer basket in a single layer without overcrowding. Cook for 15 minutes, shaking or flipping halfway through.
  7. Check for doneness; fries should be golden and crispy outside, tender inside. Cook an additional 3-5 minutes if extra crispiness is desired.
  8. Serve immediately, optionally sprinkling extra sea salt and fresh rosemary leaves.

Notes

Soaking the potatoes removes excess starch for crispier fries. Dry thoroughly to avoid steaming. Shake the basket halfway through cooking for even browning. Avoid overcrowding the air fryer basket. Use fresh rosemary for best flavor; reduce amount if using dried rosemary. Reheat leftovers in the air fryer to maintain crispiness.
