Ingredients

Scale
  • 2 lbs chicken wings, split at joints, tips removed (fresh or thawed)
  • 1 tbsp baking powder (not baking soda)
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1/4 cup unsalted butter, melted
  • 3 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1/2 tsp lemon zest (optional)
  • Salt and pepper, to taste
  • Extra grated parmesan, for garnish (optional)
  • Chopped parsley or chives, for garnish (optional)

Instructions

  1. Pat the chicken wings dry with paper towels and place in a large bowl.
  2. Sprinkle wings with baking powder, salt, pepper, garlic powder, smoked paprika, and cayenne (if using). Toss well to coat and let sit for 5 minutes.
  3. Preheat air fryer to 400°F for about 3 minutes.
  4. Arrange wings in a single layer in the air fryer basket. Cook in batches if needed.
  5. Air fry for 10 minutes, then flip each wing. Cook for another 10-14 minutes until deep golden and crispy (internal temp 165°F).
  6. While wings cook, melt butter in a small saucepan over low heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Remove from heat and stir in parmesan, parsley, and lemon zest. Season with salt and pepper.
  7. Transfer cooked wings to a large bowl. Pour garlic parmesan sauce over and toss until coated.
  8. Arrange wings on a serving platter. Garnish with extra parmesan and parsley. Serve hot.

Notes

Pat wings dry for maximum crispiness. Baking powder is essential for crunchy skin—do not substitute with baking soda. Cook in batches to avoid overcrowding. Toss wings in sauce just before serving to keep them crispy. For dairy-free, use vegan butter and nutritional yeast. Keep batches warm in a low oven if serving a crowd.
