Crispy BBQ Chicken Flatbread

A quick and easy flatbread topped with shredded BBQ chicken, melted cheese, and fresh cilantro, perfect for casual gatherings or a fast weeknight dinner.

  • 1 large flatbread or naan (store-bought or homemade)
  • 1½ cups cooked chicken, shredded or chopped (rotisserie chicken recommended)
  • ½ cup barbecue sauce (Sweet Baby Ray’s preferred)
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup fresh cilantro, chopped
  • ¼ cup thinly sliced red onion (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and place a pizza stone or baking sheet inside to heat for about 15 minutes.
  2. In a mixing bowl, toss 1½ cups shredded cooked chicken with ½ cup BBQ sauce until evenly coated.
  3. Lightly brush one side of the flatbread with 1 tablespoon olive oil and sprinkle with salt and pepper.
  4. Place the flatbread on a cutting board, oiled side down. Spread the BBQ chicken evenly over the non-oiled side.
  5. Sprinkle 1 cup mozzarella and ½ cup sharp cheddar cheese over the chicken. Add thin slices of red onion if using.
  6. Transfer the flatbread onto the preheated pizza stone or baking sheet and bake for 10-12 minutes until edges are golden and cheese is bubbling.
  7. Remove from oven and immediately sprinkle ¼ cup chopped fresh cilantro over the top.
  8. Let cool for 2-3 minutes, then slice into 6-8 pieces and serve warm.

Notes

For extra crisp edges, place the flatbread directly on the oven rack for the last 2 minutes of baking. Avoid overloading with chicken or sauce to prevent sogginess. Add fresh cilantro only after baking to preserve its brightness. Use gluten-free flatbread and check BBQ sauce labels for gluten-free options. To reheat leftovers, use a hot oven or toaster oven to maintain crispiness; avoid microwaving.
