Crispy BBQ Chicken Pizza on Homemade Crust

A delicious and easy-to-make BBQ chicken pizza featuring a crispy homemade crust, smoky BBQ sauce, and melted cheese. Perfect for cozy dinners or entertaining guests.

  • 2 ½ cups (310g) all-purpose flour
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 cup (240ml) warm water (about 110°F/43°C)
  • 1 ½ cups cooked chicken breast, shredded or diced
  • ½ cup BBQ sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded smoked gouda or cheddar cheese (optional)
  • ½ small red onion, thinly sliced
  • Fresh cilantro leaves for garnish
  • 1 small jalapeño, thinly sliced (optional)
  • 1 tbsp butter, melted (for brushing crust edges, optional)

Instructions

  1. In a large bowl, combine 2 ½ cups flour, 1 tsp instant yeast, 1 tsp sugar, and 1 tsp salt. Stir together.
  2. Pour in 1 cup warm water and 1 tbsp olive oil. Mix with a wooden spoon or your hands until a shaggy dough forms, about 5 minutes.
  3. Turn dough onto a floured surface and knead for 7-8 minutes until smooth and elastic. Add a little more flour if sticky.
  4. Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  5. While dough rises, toss shredded chicken with ½ cup BBQ sauce in a small bowl. Set aside.
  6. Preheat oven to 475°F (245°C) and place baking stone or sheet inside to heat.
  7. Punch down risen dough and roll or stretch into a 12-inch circle on a floured surface. Create a slightly thicker edge for the crust.
  8. Transfer dough to parchment paper. Brush edges lightly with melted butter.
  9. Spread about 2 tbsp BBQ sauce over dough, leaving crust bare. Sprinkle 1 ½ cups mozzarella evenly, then add BBQ chicken, sliced red onions, and optional jalapeños. Top with ½ cup smoked gouda or cheddar if using.
  10. Slide pizza (on parchment) onto preheated stone or baking sheet. Bake for 12-15 minutes until crust is golden and cheese is bubbly and browned.
  11. Remove pizza from oven and sprinkle fresh cilantro leaves on top. Let rest 3-5 minutes before slicing.

Notes

Preheat baking stone or sheet for at least 30 minutes for a crispy crust. Brush crust edges with melted butter for golden color. Let pizza rest before slicing to help cheese set. Adjust baking time or temperature if crust is not crisping enough. Tent with foil if edges brown too fast.
