A quick and easy flatbread featuring sweet caramelized onions and nutty Gruyere cheese on a crispy base, perfect for a snack or light meal.

  • 1 large store-bought flatbread or naan (810 inches diameter)
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 ½ cups shredded Gruyere cheese (about 150g / 5.3 oz)
  • 1 teaspoon fresh thyme leaves (optional)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon balsamic vinegar (optional)
  • 1 tablespoon olive oil

Instructions

  1. Heat butter in a large skillet over medium-low heat. Add sliced onions and a pinch of salt. Cook slowly, stirring every 5 minutes, until onions turn golden brown and sweet, about 15 minutes.
  2. Stir in minced garlic and fresh thyme leaves. Cook for another 2 minutes until fragrant. If using balsamic vinegar, drizzle it in now and stir well. Remove from heat.
  3. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Place flatbread on the baking sheet. Lightly brush with olive oil for crispness. Spread the caramelized onion mixture evenly over the flatbread, leaving a small border around the edges.
  5. Generously sprinkle shredded Gruyere cheese on top of the onions. Add extra thyme for garnish if desired.
  6. Bake in the oven for 10-12 minutes until cheese is melted, bubbly, and golden brown on the edges. Start checking at 10 minutes to avoid burning.
  7. Remove from oven and let rest for 2 minutes so the cheese sets slightly. Slice into wedges and serve warm or at room temperature.

Notes

Cook onions low and slow to avoid burning and achieve perfect caramelization. Use fresh shredded Gruyere cheese for best melting and flavor. Avoid microwaving leftovers to keep flatbread crispy; reheat in oven or toaster oven instead. Can caramelize onions up to 2 days ahead and refrigerate.
