  • 1/2 cup (115g) unsalted butter, softened
  • 34 garlic cloves, finely minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon sea salt (adjust to taste)
  • 1/4 teaspoon black pepper, freshly ground
  • Optional: pinch of red pepper flakes
  • Optional toppings: grated Parmesan cheese
  • Optional toppings: chopped chives or green onions

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. Slice the baguette into 1-inch (2.5 cm) thick slices, but do not cut all the way through; leave the base intact so the loaf stays together.
  3. In a mixing bowl, combine softened butter, minced garlic, chopped parsley, rosemary, thyme, salt, pepper, and red pepper flakes (if using). Mix well until fully blended and fragrant.
  4. Use a butter knife or small spatula to generously spread the herb butter between each slice and over the top of the loaf.
  5. Sprinkle grated Parmesan cheese over the top or scatter chopped chives for garnish, if desired.
  6. Wrap the loaf tightly in foil to keep the bread soft inside while baking.
  7. Place the wrapped loaf on a baking sheet and bake for 15 minutes until the butter is melted and the bread is steaming hot.
  8. Carefully remove the foil and bake uncovered for another 5-7 minutes to crisp the top to a golden crust.
  9. Check that the bread is crunchy on the edges and soft inside with a rich garlicky aroma.
  10. Let the bread cool for a minute or two before serving so the butter settles but remains gooey.

Notes

Use day-old bread for best crispiness. Soften butter well before mixing for easy spreading. Watch the bread closely during the final crisping step to avoid burning the garlic. You can prepare the loaf ahead and refrigerate it wrapped for up to 24 hours before baking, adding a few extra minutes to baking time. For dairy-free, substitute butter with vegan margarine or coconut oil.
