These crispy loaded bacon jalapeño poppers are an easy homemade appetizer featuring spicy jalapeños filled with a creamy cheese mixture and wrapped in crispy bacon. Perfect for game day snacks, potlucks, or family gatherings.

  • 12 medium fresh jalapeños, washed and halved lengthwise
  • 8 oz cream cheese, softened (full-fat preferred)
  • 1 cup sharp cheddar cheese, shredded
  • 12 slices thin-cut bacon
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • Optional: smoked paprika or cayenne pepper for smoky or extra spicy kick

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.
  2. Wear gloves. Slice each jalapeño in half lengthwise and scoop out seeds and membranes to control heat.
  3. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  4. Fill each jalapeño half generously with the cheese mixture and smooth the tops.
  5. Wrap each filled jalapeño half tightly with one slice of bacon. Secure with a toothpick if needed.
  6. Place poppers seam side down on the wire rack.
  7. Bake for 20-25 minutes until bacon is crispy and cheese is bubbly. Turn poppers over gently halfway through baking (around 12 minutes).
  8. Remove from oven and let poppers rest for 5 minutes before serving.

Notes

Wear gloves when handling jalapeños to avoid skin irritation. Use a wire rack for even bacon crisping or flip poppers halfway through baking if no rack is available. For extra crispiness, broil for 1-2 minutes at the end but watch carefully to prevent burning. Remove toothpicks before serving. Store cooled poppers in an airtight container in the fridge for up to 3 days and reheat in the oven to maintain crispiness. Freeze wrapped individually for up to 2 months.
