  • 3/4 cup (150 g) granulated sugar
  • 2 large egg whites, room temperature
  • 3 tbsp (45 g) unsalted butter, melted and slightly cooled
  • 1 tsp vanilla extract
  • 2 tbsp toasted sesame seeds
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Toast the sesame seeds in a dry skillet over medium heat, stirring frequently for 3-5 minutes until golden brown and fragrant. Set aside to cool.
  3. In a medium bowl, whisk together the flour, sugar, and salt until well combined.
  4. In a separate bowl, lightly beat the egg whites until just frothy.
  5. Add the melted butter and vanilla extract to the egg whites and stir gently to blend.
  6. Gradually fold the wet mixture into the dry ingredients with a spatula until smooth but slightly thick.
  7. Fold in the cooled toasted sesame seeds evenly through the batter.
  8. Drop small dollops of batter (about a teaspoon each) onto the prepared baking sheet, spacing about 3 inches apart.
  9. Optionally, quickly spread each dollop thin with the back of a spoon or offset spatula to about 3 inches wide before baking.
  10. Bake for 8-10 minutes until edges are golden brown and centers remain pale.
  11. Immediately after baking, while cookies are pliable, lift each with a spatula and roll around the handle of a wooden spoon or thin rolling pin to form the classic love letter scroll shape. If too firm, let cool slightly before shaping.
  12. Transfer shaped cookies to a wire rack to cool completely and crisp up.

Notes

Toast sesame seeds carefully to avoid burning. Work quickly when shaping cookies as they harden fast. Use room temperature egg whites for best texture. Cookies can be stored in an airtight container for up to 5 days or frozen for up to a month. Warm frozen cookies briefly to refresh crispness.
