A quick and easy side dish featuring tender asparagus roasted to crispy perfection with a golden Parmesan cheese topping. Perfect for weeknight dinners or special occasions.

  • 2 tablespoons extra virgin olive oil
  • 1/3 cup freshly grated Parmesan cheese (about 30 grams)
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Allow 10-15 minutes for the oven to reach the temperature.
  2. Rinse the asparagus spears under cold water and pat dry with a kitchen towel. Snap off the woody ends by bending each stalk until it naturally breaks (about 1 to 2 inches from the bottom).
  3. Toss asparagus in a mixing bowl with olive oil, garlic powder, salt, and pepper until evenly coated.
  4. Arrange the asparagus on a rimmed baking sheet lined with parchment paper or a silicone baking mat in a single layer with space between each spear.
  5. Roast for 12 minutes, flipping the spears halfway through (after 6 minutes) using tongs or a spatula.
  6. Remove the baking sheet and sprinkle freshly grated Parmesan cheese evenly over the asparagus.
  7. Return to the oven and roast for another 3-5 minutes until the cheese melts, bubbles, and turns golden brown without burning.
  8. Optionally, remove from oven and sprinkle with lemon zest for a fresh, bright finish.
  9. Serve immediately while crispy and tender.

Notes

Use fresh asparagus for best results; frozen asparagus tends to become soggy. Use freshly grated Parmesan cheese rather than pre-shredded for better crispiness. If cheese melts too quickly, tent loosely with foil to prevent burning. Adjust roasting time by 2-3 minutes for thicker asparagus. Leftovers can be reheated in a 375°F oven for 5-7 minutes to restore crispiness; avoid microwaving.
