  • 4 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ¾ cup (75g) unsweetened cocoa powder
  • 1 cup (130g) all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 12 Cadbury Mini Eggs or standard-sized Cadbury Creme Eggs, unwrapped
  • Optional: powdered sugar for dusting
  • Optional: sea salt flakes for a salty-sweet punch

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking pan, or line it with parchment paper for easier removal.
  2. In a large bowl, whisk together the melted butter and granulated sugar until combined and glossy.
  3. Crack in the eggs one at a time, whisking vigorously after each addition to fully incorporate. Stir in the vanilla extract.
  4. In a separate bowl, sift together cocoa powder, flour, salt, and baking powder.
  5. Gradually fold the dry ingredients into the wet mixture using a spatula. Stop as soon as no streaks of flour remain.
  6. Pour half of the brownie batter into your prepared pan and spread evenly with a spatula.
  7. Carefully place the unwrapped Cadbury eggs evenly spaced over the batter.
  8. Spoon the remaining brownie batter over the eggs, gently spreading to cover them completely.
  9. Bake for 30-35 minutes. Start checking around 30 minutes by inserting a toothpick away from the eggs; it should come out with a few moist crumbs but not wet batter.
  10. Let the brownies cool completely on a wire rack for at least 1 hour.
  11. Cut into squares with a sharp knife, dust with powdered sugar or sprinkle sea salt if desired, and serve.
