Decadent Chocolate Ganache Brownies

  • 1 cup (226g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) brown sugar, packed
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 cup (85g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 8 ounces (225g) semi-sweet chocolate, chopped
  • 1/2 cup (120ml) heavy cream
  • 1 tablespoon unsalted butter (optional, for shine)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs one at a time, whisking well after each addition. Stir in vanilla extract.
  4. Sift together the flour, cocoa powder, and salt, then gently fold into the wet ingredients using a spatula. Be careful not to overmix—you want everything just combined.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs (not wet batter).
  6. Let the brownies cool completely in the pan.
  7. While the brownies cool, prepare the ganache. Heat the heavy cream in a saucepan over medium heat until it just begins to simmer. Remove from heat and pour over the chopped chocolate.
  8. Let the mixture sit for 2-3 minutes, then stir until smooth. Add butter if desired for extra shine.
  9. Pour the ganache over the cooled brownies and spread evenly. Refrigerate for at least 1 hour to set.
  10. Lift the brownies out of the pan using the parchment overhang, slice into squares, and serve!
