Decadent Chocolate Tiramisu Cupcakes

Rich chocolate cupcakes infused with espresso, filled with creamy mascarpone, and topped with whipped cream and cocoa powder for a portable twist on classic tiramisu.

Ingredients

  • 1 cup (120g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (120ml) brewed espresso or strong coffee (cooled)
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (60ml) vegetable oil
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 8 oz (225g) mascarpone cheese
  • 1/4 cup (30g) powdered sugar
  • 1 tsp vanilla extract
  • 1 cup (240ml) heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Cocoa powder (for dusting)
  • Optional: A splash of coffee liqueur

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the cooled espresso, sugar, oil, egg, and vanilla extract until smooth.
  4. Gradually add the wet mixture into the dry ingredients, stirring until just combined. Avoid overmixing.
  5. Divide the batter evenly among the cupcake liners, filling each about 3/4 full. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let them cool completely.
  6. Beat the mascarpone cheese, powdered sugar, and vanilla extract together until creamy. Transfer to a piping bag.
  7. Use a small knife or cupcake corer to remove the center of each cupcake. Pipe the mascarpone filling into the hole of each cupcake.
  8. Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Pipe or spread onto the filled cupcakes.
  9. Dust the tops with cocoa powder using a fine mesh sieve.
