Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and grease a 9×13-inch pan or line it with parchment paper.
  2. Melt 1 cup (227g) unsalted butter in a microwave-safe bowl until just melted (about 1-2 minutes). Let cool slightly.
  3. In a large bowl, whisk together the melted butter and 2 cups (400g) granulated sugar until smooth and glossy.
  4. Beat in 3 large eggs, one at a time, mixing thoroughly after each addition. Stir in 2 teaspoons pure vanilla extract.
  5. In a separate bowl, sift together 1 cup (125g) all-purpose flour, 3/4 cup (75g) unsweetened cocoa powder, and 1/2 teaspoon salt. Add 1/2 teaspoon espresso powder if using.
  6. Gradually fold the dry ingredients into the wet mixture with a spatula until just combined; do not overmix.
  7. Fold in 1 1/2 cups (270g) roughly chopped chocolate chunks and optional 1/2 cup (75g) chopped toasted nuts.
  8. Pour the batter evenly into the prepared pan and smooth the top with a spatula.
  9. Bake for 30-35 minutes. Check doneness by inserting a toothpick in the center; it should come out with moist crumbs but no wet batter.
