A quick and fresh appetizer featuring cherry tomatoes, mozzarella balls, and basil leaves drizzled with a homemade balsamic glaze. Perfect for entertaining or a light snack.

Ingredients

Scale
  • 20 cherry tomatoes, washed
  • 20 small mozzarella balls (bocconcini), drained and patted dry
  • 20 fresh basil leaves, medium-sized
  • 2 tablespoons extra virgin olive oil
  • Pinch of salt (sea salt or kosher salt)
  • Freshly ground black pepper, to taste
  • ½ cup balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • 20 wooden skewers or toothpicks

Instructions

  1. Prepare the balsamic glaze: Pour ½ cup (120 ml) balsamic vinegar into a small saucepan over medium heat. Add 1 tablespoon (15 ml) honey or brown sugar. Stir to combine. Bring to a gentle simmer and let reduce for 10–12 minutes, stirring occasionally, until it thickens to a syrupy consistency that coats the back of a spoon. Be careful not to let it burn; reduce heat if necessary. Remove from heat and set aside to cool.
  2. Drain the mozzarella balls well and pat dry with paper towels to remove excess moisture.
  3. Rinse the cherry tomatoes and basil leaves under cool water. Dry thoroughly with a kitchen towel or salad spinner.
  4. On each toothpick or small skewer, thread one cherry tomato, followed by a basil leaf (folded if large), then a mozzarella ball. Repeat until all ingredients are used, making about 20 skewers.
  5. Place the assembled skewers in a shallow dish. Drizzle 2 tablespoons (30 ml) extra virgin olive oil over them. Sprinkle with a pinch of sea salt and freshly ground black pepper to taste. Gently toss or shake the dish to coat evenly.
  6. Just before serving, drizzle the cooled balsamic glaze over the skewers using a spoon or squeeze bottle for even coverage.
  7. Arrange the skewers on a platter and enjoy immediately. If not serving right away, cover and refrigerate for up to 2 hours but add the glaze just before presenting.

Notes

Pat mozzarella dry to prevent sogginess and help glaze stick. Reduce balsamic vinegar slowly to avoid burning. Assemble skewers close to serving time to keep basil fresh. If glaze thickens too much after cooling, whisk in a teaspoon of warm water to loosen.
