  • 2 large eggs, room temperature
  • 2 tablespoons (30 g) unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Cream cheese icing (comes with cinnamon rolls or make your own):
  • 4 oz (115 g) cream cheese, softened
  • 1 cup (120 g) powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons (30 ml) milk or heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish with butter or non-stick spray.
  2. Open the package of cinnamon rolls and cut each roll into quarters. Set aside the icing packet if included.
  3. In a medium bowl, whisk together milk, eggs, melted butter, ground cinnamon, and vanilla extract until smooth.
  4. Place the cinnamon roll chunks evenly into the baking dish. Pour the egg and milk mixture evenly over the top, ensuring all pieces are soaked.
  5. Let the casserole rest for 10 minutes to allow the cinnamon rolls to absorb the custard.
  6. Bake in the preheated oven for 25–30 minutes, or until the top is golden brown and the custard is set but still soft in the middle.
  7. While baking, prepare the cream cheese icing by whisking together softened cream cheese, powdered sugar, vanilla extract, and milk or heavy cream until smooth and creamy.
  8. Once baked and slightly cooled (about 5 minutes), drizzle the cream cheese icing generously over the casserole.
