Easy Irresistible Green Candy Bark Recipe with Pistachios and White Chocolate

  • 3/4 cup raw pistachios, shelled and roughly chopped
  • 1/4 cup green candy melts or green-colored white chocolate
  • 1/3 cup crushed peppermint candies or candy canes (optional)
  • Pinch of sea salt flakes
  • 1 tsp vanilla extract

Instructions

  1. Line a baking sheet with parchment paper or a silicone baking mat. Roughly chop the pistachios and crush the peppermint candies if using. Set aside.
  2. Place white chocolate chips in a microwave-safe bowl. Microwave in 30-second bursts, stirring well between each, until smooth and glossy (about 2-3 minutes total). Alternatively, melt over a double boiler—stir constantly until smooth. Be careful not to overheat.
  3. Stir in the vanilla extract and a pinch of sea salt to the melted chocolate.
  4. Pour melted white chocolate onto the prepared baking sheet. Use a spatula to spread it evenly to about 1/4-inch (6 mm) thickness.
  5. While the chocolate is still warm, sprinkle the chopped pistachios and crushed peppermint candies evenly over the surface. Drop small spoonfuls of the melted green candy melts in random spots, then swirl lightly with a toothpick or skewer for a marbled effect.
  6. Allow the bark to cool completely at room temperature or refrigerate for faster setting (30-45 minutes). Avoid touching it during this time.
  7. Once set, gently lift the bark from the parchment and break it into irregular chunks. Store in an airtight container.

Notes

If white chocolate seizes or becomes grainy, add a small splash of vegetable oil or shortening while melting to smooth it out. Avoid mixing water with melted chocolate. When swirling green candy melts, do not overmix to maintain pretty streaks. Toast pistachios lightly for extra aroma. Store bark in a cool, dry place to maintain snap and avoid chocolate bloom.
