A quick and easy festive mimosa featuring sparkling wine, cranberry and orange juices, garnished with fresh cranberries and rosemary for a bright holiday sparkle.

  • 750 ml chilled sparkling wine or champagne (brut or extra dry preferred)
  • 1 cup (240 ml) fresh cranberry juice (100% juice, no added sugars)
  • 1 cup (240 ml) orange juice (freshly squeezed if possible)
  • A handful of fresh cranberries (for garnish)
  • A few fresh rosemary sprigs (for garnish)
  • 2 tablespoons simple syrup (optional, for sweetness)

Instructions

  1. Chill all ingredients (sparkling wine, cranberry juice, and orange juice) in the refrigerator for about 1 hour.
  2. If using simple syrup, prepare it by combining equal parts sugar and water in a small saucepan, heating gently until sugar dissolves, then cool (about 10 minutes).
  3. In a pitcher, combine cranberry juice, orange juice, and simple syrup if using. Stir gently to blend.
  4. Pour the juice mixture into champagne flutes, filling about halfway (approximately 4 ounces or 120 ml).
  5. Slowly top off each flute with chilled sparkling wine or champagne, about 4 ounces (120 ml) per glass, pouring gently to preserve bubbles.
  6. Garnish each glass with 3 to 4 fresh cranberries and a small rosemary sprig.
  7. Serve immediately for maximum fizz and flavor.

Notes

Keep all ingredients well chilled to preserve fizz. Pour sparkling wine slowly down the side of the glass to avoid bubbling over. Adjust sweetness by adding or omitting simple syrup. Freshly squeezed orange juice is preferred for best flavor. Garnish with rosemary sprigs for aroma and festive look. For non-alcoholic version, substitute sparkling wine with sparkling water or sparkling apple cider.
