  • 1 lb (450 g) ground beef (80/20 blend)
  • 1 tbsp olive oil (extra virgin recommended)
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp dried oregano
  • ¼ tsp crushed red pepper flakes (optional)
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • Juice of 1 fresh lime
  • 8 small (6-inch/15 cm) soft corn or flour tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, chopped cilantro, shredded cheese, sour cream, sliced jalapeños

Instructions

  1. Finely chop the onion and mince the garlic cloves. Measure out the spices (chili powder, smoked paprika, cumin, oregano, red pepper flakes, salt, and black pepper).
  2. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Heat until shimmering but not smoking, about 1-2 minutes.
  3. Add the chopped onion to the skillet and cook, stirring frequently, for 3-4 minutes until softened and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the ground beef to the skillet. Let it sit undisturbed for 2 minutes to brown, then stir and break up the meat. Cook for 5-7 minutes until browned and no longer pink.
  5. Sprinkle the homemade taco seasoning evenly over the beef. Stir well to coat. Add ¼ cup (60 ml) water and simmer for 3-4 minutes until the liquid reduces and thickens.
  6. Remove the skillet from heat and stir in the fresh lime juice.
  7. Warm the tortillas on a dry skillet or over a gas flame for a few seconds per side until pliable and slightly charred.
  8. Assemble the tacos by spooning the beef mixture onto each tortilla and adding desired toppings such as lettuce, tomatoes, cilantro, cheese, and sour cream.

Notes

Do not overcrowd the pan to ensure proper browning. Use fresh spices for best flavor. Brown the beef before stirring to develop a crust. Adjust heat to avoid burning spices. Warm tortillas while beef simmers. Add lime juice at the end for brightness. If beef seems dry, add a splash of water or olive oil.
