  • 1 pound (450g) large shrimp, peeled and deveined (fresh or thawed from frozen; wild-caught preferred)
  • 3 tablespoons olive oil (extra virgin recommended)
  • Juice of 2 lemons (freshly squeezed)
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Β½ teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Wooden or metal skewers (if wooden, soak in water 30 minutes before grilling)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels (about 5 minutes).
  2. In a mixing bowl, combine olive oil, freshly squeezed lemon juice, minced garlic, smoked paprika, red pepper flakes (if using), salt, and black pepper. Whisk until well blended (3 minutes).
  3. Toss the shrimp in the marinade, coating evenly. Cover and refrigerate for 15-20 minutes, avoiding marinating longer than 30 minutes.
  4. If using wooden skewers, soak them in water for at least 30 minutes. Thread about 4-5 shrimp per skewer (5 minutes).
  5. Preheat grill to medium-high heat (about 400Β°F/200Β°C). Brush grates lightly with oil.
  6. Grill the shrimp skewers for 2-3 minutes per side until shrimp turn opaque and develop a light char (total cook time 5-6 minutes). Avoid overcooking.
  7. Remove skewers from grill and sprinkle with fresh chopped parsley. Serve immediately.

Notes

Do not marinate shrimp longer than 30 minutes to avoid mushy texture. Watch shrimp closely while grilling to prevent overcooking; shrimp should curl into a loose ‘C’ shape. Soak wooden skewers before grilling to prevent burning. Leftovers can be stored in the refrigerator for up to 2 days and reheated gently.
