  • 3 tablespoons unsalted butter, melted and cooled (42g)
  • 1 large egg, room temperature
  • Cornmeal, for dusting
  • Butter or neutral oil, for greasing griddle/pan

Instructions

  1. In a large bowl, combine warm milk, sugar, and yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Add melted butter, egg, and salt to the yeast mixture. Stir until combined.
  3. Gradually add flour, mixing with a wooden spoon until a soft, slightly sticky dough forms.
  4. Turn dough onto a floured surface and knead for about 5 minutes until elastic and smooth.
  5. Place dough back in the bowl, cover, and let rise in a warm spot for 1 hour, until doubled in size.
  6. Sprinkle a baking sheet with cornmeal. Punch down dough and divide into 12 equal pieces. Shape into balls, then flatten into 3-inch rounds. Place on the cornmeal-dusted sheet and dust tops lightly.
  7. Cover muffins and let rest for 20-30 minutes for a second rise.
  8. Heat a griddle or large skillet over medium-low and lightly grease. Cook muffins for 7-8 minutes per side, flipping gently, until golden brown and hollow-sounding when tapped.
  9. Let muffins cool on a rack for 10 minutes. Split with a fork to reveal nooks and crannies.
