  • 2 1/2 cups (300g) gluten free flour blend
  • 1/2 teaspoon salt
  • 1 teaspoon xanthan gum (if not included in your flour blend)
  • 1/4 cup warm water (100°F/38°C)
  • 1 tablespoon sugar
  • 2 teaspoons instant yeast
  • 1/2 cup (120ml) warm milk
  • 1/4 cup (60g) softened butter
  • 2 room-temperature eggs
  • Melted butter for brushing

Instructions

  1. Activate the Yeast: In a small bowl, combine 1/4 cup warm water (100°F/38°C) with 1 tablespoon sugar and 2 teaspoons instant yeast. Stir gently and let sit for 5-10 minutes, until frothy.
  2. Mix the Dry Ingredients: In a large bowl, whisk together 2 1/2 cups (300g) gluten free flour blend, 1/2 teaspoon salt, and 1 teaspoon xanthan gum (if not included in your flour blend).
  3. Combine Wet Ingredients: In another bowl, whisk together 1/2 cup (120ml) warm milk, 1/4 cup (60g) softened butter, 2 room-temperature eggs, and the activated yeast mixture.
  4. Make the Dough: Gradually add the wet ingredients to the dry ingredients, mixing until a sticky dough forms. If using a stand mixer, mix on medium speed for 3-5 minutes. If mixing by hand, use a wooden spoon and lots of elbow grease!
  5. Shape the Rolls: Divide the dough into 12 equal pieces (about 50g each). Roll each piece into a ball and place on a parchment-lined baking sheet, spaced evenly.
  6. Let Rise: Cover the rolls with a clean kitchen towel and let them rise in a warm place for 30-40 minutes, until doubled in size.
  7. Bake: Preheat your oven to 375°F (190°C). Bake the rolls for 18-20 minutes, or until golden brown on top.
  8. Brush with Butter: Remove the rolls from the oven and immediately brush the tops with melted butter for extra flavor and shine.
