  • 1 ripe avocado, peeled and pitted
  • ½ cup (120 ml) plain, full-fat Greek yogurt (or dairy-free coconut yogurt)
  • ¼ cup chopped fresh basil
  • ¼ cup chopped flat-leaf parsley
  • ¼ cup chopped chives
  • 2 tablespoons freshly squeezed lemon juice
  • 1 small clove garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon sea salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • Optional: 1 teaspoon Dijon mustard

Instructions

  1. Rinse and dry the fresh herbs thoroughly. Peel and pit the ripe avocado, then scoop the flesh into your food processor or blender. Mince the garlic finely.
  2. Add ½ cup (120 ml) of plain Greek yogurt to the avocado to create the creamy base.
  3. Add ¼ cup each of chopped basil, parsley, and chives to the mixture.
  4. Pour in 2 tablespoons (30 ml) fresh lemon juice, 1 tablespoon (15 ml) apple cider vinegar, and 2 tablespoons (30 ml) extra virgin olive oil.
  5. Add 1 small minced garlic clove, ½ teaspoon salt, ¼ teaspoon freshly ground black pepper, and 1 teaspoon Dijon mustard if using. Blend on high until silky smooth and emulsified, scraping down the sides as needed.
  6. If the dressing is too thick, add a teaspoon or two of cold water or more lemon juice to thin to desired consistency. Taste and adjust salt and pepper as needed.
  7. Transfer the dressing to an airtight container and refrigerate for at least 30 minutes before serving to let flavors meld and dressing thicken slightly.

Notes

Use ripe avocados for best texture and flavor. Blend in bursts to avoid bitterness. Chill dressing for at least 30 minutes before serving. Store in an airtight container in the fridge for up to 4 days. For dairy-free, substitute Greek yogurt with unsweetened coconut yogurt and add extra olive oil for creaminess.
