Fresh Honey Mustard Glazed Salmon Recipe with Crisp Snap Peas

A quick and easy honey mustard glazed salmon served with crisp snap peas, offering a perfect balance of sweet and tangy flavors with a fresh, crunchy side.

  • 4 salmon fillets (about 6 oz each), skin-on, wild-caught if possible
  • 3 tablespoons honey (raw or local preferred)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh lemon juice, freshly squeezed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 12 oz snap peas, trimmed and rinsed
  • Salt and freshly cracked black pepper, to taste
  • Optional: chopped fresh parsley or dill for garnish

Instructions

  1. Rinse and pat dry the salmon fillets. Trim the snap peas and mince the garlic. Squeeze fresh lemon juice and set honey and Dijon mustard nearby.
  2. In a small bowl, whisk together honey, Dijon mustard, lemon juice, and minced garlic until smooth and glossy.
  3. Lightly salt and pepper both sides of the salmon.
  4. Heat 1 tablespoon olive oil in a non-stick or cast iron skillet over medium-high heat. Place salmon skin-side down and cook without moving for 4-5 minutes until skin is crisp and salmon is cooked halfway up the sides.
  5. Carefully flip the salmon. Spoon the honey mustard glaze over the top, coating evenly. Cook for another 3 minutes or until salmon flakes easily but remains moist inside.
  6. While salmon cooks, toss snap peas with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast in a preheated 425°F oven for 8-10 minutes until tender-crisp and slightly blistered. Alternatively, sauté snap peas in a pan with olive oil for 4-5 minutes until bright green and crisp.
  7. Serve salmon fillets alongside the crisp snap peas. Drizzle any extra glaze over the salmon and garnish with chopped fresh herbs if desired.

Notes

Do not overcook the salmon; it should flake easily but remain moist. Add glaze after the first side cooks to prevent burning. Rest salmon for a minute after cooking to lock in juices. For extra zing, sprinkle lemon zest on top before serving. Glaze can be prepared up to 3 days in advance and stored in the fridge.
