  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • Pinch of salt and pepper
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 2 tbsp rice vinegar
  • 1/4 cup chicken broth or water
  • 2 tbsp sugar (light brown sugar works great)
  • 1 tsp sesame oil
  • 1/2 tsp crushed red pepper flakes (adjust to taste)
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
  • Oil for frying (vegetable or peanut oil works best)
  • Sliced green onions
  • Toasted sesame seeds

Instructions

  1. In a bowl, combine the cornstarch, flour, salt, and pepper. In another bowl, beat the egg. Dip each chicken piece into the egg, then dredge in the flour mixture, coating evenly. Set aside.
  2. In a large skillet or wok, heat about 2 inches of oil over medium-high heat until it reaches 350°F. Test by dropping a small piece of chicken—if it sizzles, the oil is ready.
  3. Working in batches, fry the chicken pieces until golden brown and crispy, about 4-5 minutes per batch. Transfer to a paper towel-lined plate to drain excess oil.
  4. In a small bowl, whisk together soy sauce, hoisin, rice vinegar, chicken broth, sugar, sesame oil, and red pepper flakes. Mix the cornstarch slurry separately and set aside.
  5. Drain most of the oil from the skillet, leaving about 1 tablespoon. Add the sauce mixture and bring to a simmer. Stir in the cornstarch slurry and cook until the sauce thickens, about 1-2 minutes.
  6. Add the crispy chicken to the sauce, tossing until fully coated. Garnish with sliced green onions and sesame seeds. Serve immediately with steamed rice or noodles.
