This easy summer BBQ side features sweet, smoky grilled corn slathered in tangy lime butter and sprinkled with fresh cilantro. It’s a crowd-pleaser that’s quick to make and perfect for any warm-weather gathering.

  • 46 ears fresh corn on the cob, husked
  • 4 tablespoons unsalted butter, softened
  • 1 large lime, zested and juiced (or 2 small limes)
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)

Instructions

  1. Husk the corn, removing silk, and rinse under cool water. Pat dry and trim tough ends if needed.
  2. Preheat your outdoor grill or grill pan to medium-high (about 400°F). Brush grates lightly with oil to prevent sticking.
  3. In a small bowl, mix softened butter, lime zest and juice, salt, pepper, and garlic powder (if using) until smooth and creamy. Taste and adjust lime or salt as desired.
  4. Place corn directly on the hot grill. Cook for 10-12 minutes, turning every 2-3 minutes with tongs, until kernels are lightly charred and tender.
  5. While corn is still hot, slather each ear generously with lime butter using a basting brush or spoon. Sprinkle with chopped cilantro if desired.
  6. Transfer corn to a serving platter and serve immediately for best flavor and texture.

Notes

For softer corn, wrap ears in foil before grilling. You can prep lime butter and husk corn ahead of time. For a spicy kick, add chili powder to the butter. Substitute plant-based margarine for a vegan version. Use parsley instead of cilantro if preferred.
